Ingredients for Masala Kaleji:
- fresh coriander 1 tablespoon
- yogurt 1 cup
- 1 teaspoon garam masala powder
- red chilli powder to taste
- turmeric powder ½ teaspoon
- 1 tablespoon coriander powder
- 2 medium green chillies
- 3-4 cloves
- onion 1 medium
- ½ cup cooking oil
- bay leaf 1
- cloves 5-6
- 1 medium cinnamon stick
- 8-10 black peppercorns
- 1 green cardamom
- salt 1 teaspoon
- mutton kaleji ½ kg
- 1 & ½ tablespoons lemon juice
- roasted & crushed cumin seeds ½ tablespoon
- kasuri meethi ½ tablespoon
- fresh coriander chopped
- fresh coriander
- ginger julienne
- green chillies
How to prepare Masala Kaleji:
Start by taking a bowl then add 1 cup yogurt in it with 1 teaspoon of garam masala powder and red chili according to your own taste.
Now add ½ teaspoon of turmeric powder with 1 tablespoon of coriander powder then mix it well with the help of a beater.
After that, take a chopper then add 2 medium green chillies with 3-4 cloves, 1 tablespoon fresh coriander and 1 medium onion.
Chop all the ingredients well. Take a pan then add 2 cups of cooking oil with 5-6 cloves and 1 medium size cinnamon stick.
Add 8-10 black peppercorns, 1 green cardamom and 1 bay leaf. Stir it well with the help of a spoon then add the mixture you prepare earlier.
Let it cook for 4-5 minutes then add the most special ingredient ½ kg mutton kaleji. Mix it well with the help of a spoon then cook for about 8-10 minutes.
It’s time to add your mixture of yogurt you prepare at the start. Let it cook for 4-5 minutes then cover the lid and turn the flame low.
Now cook it more for about 4-5 minutes until the oil separates. Remove the lid then add 1 & ½ tablespoons of lemon juice.
Add ½ tablespoon of roasted and crushed cumin seeds with ½ tablespoon of kasuri meethi. Mix well again and cook for 4-5 minutes.
Finally add 1 teaspoon of salt with chopped fresh coriander. Garnish it with the green chilies. Your Masala Kaleji is ready to serve.
